Just listened to the latest podcast. I wanted to say that I envy the energy you just spent on organizing your knitting supplies, etc. That is a great idea! I keep meaning to do that and then transfer the details to my ravelry stash information. Then I can access that by phone when I'm out in a yarn store.
I can understand your dilemna regarding knitting in the morning vs. walking. I have to get up earlier and earlier in the morning come summer to not die from our heat and humidity. I try to save a wee bit of time to knit before heading to work; I also knit in the evenings.
I think it is great that you are deciding when to walk and that walking after work fits your life style best. That is what maturity is about - making decisions for health and fitting them in when we are most likely to realistically fulfill our goals.

I love your podcast and was going to leave this comment on the right entry but can't find it at the moment. Please forgive me.
I'm a reader as well. And I don't want to give up my knitting for reading, either. I don't know if anyone else has mentioned this. Kelly Petkun from knit picks mentioned a device that holds a book open so you are free to use your hands in other ways. I think it is from Book Mates (I don't remember for sure) Anyway, I order it and really like it. It's still a bit more work to read and knit but it is easier than other methods I've used.
